Culatta with rind

Culatta with rind is a typical cold meat of Emilia obtained from the most prized part of the pork leg. During the maturing process the rind is maintained in order to guarantee a product with a more tender texture. Because the bone is removed before processing begins, slices of culatta with rind are uniform and homogeneous. Thanks to the lengthy maturing process, the flavour is sweet and delicate and the aroma intense.
